Onions (and Cornbread!)
As you may remember from previous posts, my parents are from the South – so I grew up with cornbread as a regular staple. Mom made it in a cast iron skillet (which I regret I have not followed through on). In my memory my mom could throw together a pan of cornbread in mere moments. Brush it with butter and it’s the best thing ever.
But, one of the best ways to have it was with chopped onions and milk. This was one of my father’s favorite “light” dinners (you know when you’re eating late or you just don’t want to cook). It’s easy enough. Take cornbread (fresh or leftover – though hot is really good) and crumble it up in a glass (we had these really cool goblets that were popular back in the 70’s). Chop up onion and mix in. Then pour ice cold milk (admittedly my parents liked buttermilk but I could never stand that) over it. Let sit for a minute then stick a soup spoon in and start to eat. Yum!

Yum. I love cornbread. Mom made it often, but always when we had ham and beans with diced onions on the side. When my youngest sister has Thanksgiving at her house, her mother-in-law brings cornbread that has creamed corn in it. Talk about yummy.
I'm from the Northwest and cornbread isn't that well known. But, my mother was from Oklahoma and brought a recipe with her. I've gotten out of the habit of making it, but you've tempted my tastebuds and I'm going to dig out the recipe. I hope I do it right! Yum!
I don't think I have EVER meet someone who has NEVER tasted cornbread! Yes, you are definitely invited!

My family is from Oklahoma and cornbread is a staple. We mom could fix a batch of cornbread faster than you could say Jimmy Crack Corn. We also had it with crumbled in a glass with cold milk. No onions, though. Thanks for the memories!

Cornbread is okay on it's own why torture it with onion?? Poor, poor cornbread. I'll admit though that I am not a huge fan of onions. Cooked into things and as a flavor, sure, but raw? No way!
ACK! I just noticed I misused an apostrophe! Man! And that is such a peeve of mine!!
I have never had it with onions in it but I do remember eating buttermilk and cornbread on occasions.
